What is for supper in September? Day One: Wild Rice Casserole

This tasty dish serves many and can be enjoyed for days! One of the purposes of creating this menu plan is to let people know “what I eat” without gluten, dairy, or some sugars. I will try to note specialty ingredients as I remember. Make sure to read labels!


Wild Rice Casserole

4 cups water
1 cup wild rice
3 stalks of celery
1 medium onion
1 pound ground beef (or turkey)
1 can mushroom slices
1 can water chestnuts sliced
2 cups chicken broth (make sure it is Gluten/Dairy and sugar free)
garlic, salt, and pepper to taste

~Bring water to boil and add wild rice (Trader Joe’s is cheap)
~Cook wild rice for at least 40 minutes until the outsides open
~While rice is cooking brown beef with the onion and celery
~Add the mushrooms and chestnuts to browned meat
~Add desired amount of salt, pepper, and garlic powder
~Drain wild rice and add to above mixture.
~Put mixture in covered casserole dish
~Pour 1/2 a box of chicken stalk over casserole (Trader Joe’s has the cheapest GF stalk)
~Bake for one hour at 350
~Enjoy and serve with veggies (I made a simple veggie stir-fry)
