What is for supper in September? Day 9: Crock Pot Chicken

If you read the previous post, you know that we actually had leftovers of dinner on the 9th, but I will share a super simple dinner idea with you that our family loves!

Crock Pot Chicken

1 Whole Chicken
Lemon Juice
Onion flakes
Salt and Pepper
Herbs De Provence
Rice

-Stick an entire thawed and rinsed chicken in the crock pot. If you are doing this for the first time make sure you pull out the center section from the chicken... have a bag to throw it right into. I know some of you keep, use, and eat the neck...
-Pour water over the chicken. I usually pour 3 or more cups of water in the crock pot
-Squeeze one lemon or a squirt or two of lemon juice over chicken
-Season with Herbs De Provence, S&P, and onion flakes
-Set on High until lunch time, then turn to low until dinner time
-30 minutes before the meal, remove 2 cups of water (broth)
-Combine broth and 2 cups water and heat to boil
-Add two cups of rice and generous Herbs De Provence.
-Cook rice
Serve with green beans! YUM!!!

These whole chickens are often on sale for great deals. I only buy the hormone free good stuff! They are also way more than we can eat in one meal. We save the extra chicken for a tasty casserole I will be writing about in a future entry!
